Choosing a mixer starts with the dough, not the machine
A commercial spiral mixer is usually purchased after a simple question from the buyer: how many kilograms can it mix? In real production, that question is only the starting point. A reliable recommendation depends on flour weight, hydration, batch frequency, dough type, power supply and the space available in the shop or factory.
Maihe HS series mixers are specified by flour capacity. This is important. A model rated for 20 kg capacity means 20 kg of flour, not 20 kg of finished dough. At 60% hydration, 20 kg of flour requires about 12 kg of water, producing roughly 32 kg of flour-and-water dough before salt, oil, sugar or other ingredients are added. If a buyer needs 20 kg of finished dough but selects a 20 kg flour-capacity machine, the result is normally an oversized machine rather than an exact capacity match.
For distributors, this distinction reduces both incorrect recommendations and after-sales disputes. A customer who asks for a 40 kg mixer may mean 40 kg of finished dough or 40 kg of flour. The distributor should first translate the customer’s normal and maximum recipes into flour weight, then compare that figure with the rated flour capacity of each model.
Step 1: Confirm flour weight and leave practical capacity margin
The first selection point is the flour weight per batch. A model whose rated capacity matches the buyer’s maximum flour quantity can be suitable when the recipe is stable, the dough is within the normal application range and the machine is not expected to run repeated batches at its upper limit. Buyers should consider more capacity margin when the normal batch is already close to the rating, recipes vary, dough is relatively stiff, production involves many consecutive batches or output is expected to grow.
For example, HS20 is rated for 8 kg of flour. It can match a buyer whose controlled maximum batch is 8 kg, while HS30 offers more working margin when 8 kg is the normal everyday batch or production conditions vary. The same logic applies at 12 kg: HS30 may match a stable maximum batch, while HS40 may be easier to operate when 12 kg is frequent and the buyer wants greater flexibility. This is not a rule that every customer must move up one model. It is a practical choice based on normal flour weight, maximum flour weight, dough condition, daily batch count and growth plans.
The benefit of reasonable capacity margin is easier to understand when it is connected to production: the operator has more flexibility for recipe changes and demand peaks, avoids relying on the machine’s rated limit for every batch, and may reduce unnecessary strain during frequent commercial use.
Maihe does not recommend choosing purely by bowl volume. Bowl volume helps indicate machine size, but the flour capacity is the more useful selection value for dough production.
Step 2: Match the mixer to the dough application
A commercial spiral mixer may be used for bread dough, pizza dough, buns, steamed bread, pastry dough and other food production. The buyer’s product affects how much load the machine will experience. A soft bread dough and a low-hydration, heavy dough are not the same job even if the flour weight is identical.

Power supply is often a bigger issue in export sales than buyers expect. The correct choice depends on the destination country and the customer’s installation site.
For small bakeries, shops and light commercial use, single-phase power may be requested. For medium and large machines, three-phase power is normally more suitable because the motor load is higher and the production environment is more industrial. Before confirming an order, buyers should provide destination country, available voltage, frequency and whether the site has single-phase or three-phase power.

Step 4: Choose by buyer type
A bakery owner usually chooses by current daily output and expected growth. A distributor chooses differently. Stable distributor customers may purchase across the full HS range to serve different market levels.
